5-Minute Mussels Soup

Yield: 3 Servings 


1 cup cherry tomatoes, chopped
2 tbsp butter
4 cups fish stock
7 oz mussels, defrosted and cleaned
¼ cup fish sauce 


2 tsp Italian seasoning
¼ tsp stevia powder 

How to Cook:

Wash thoroughly and wash the mussels. Drain in a large sieve and place in the pot.
Drizzle with Italian seasoning and stevia extract. Pour in the fish stock and soy sauce and put in cherry tomatoes. Stir thoroughly and shut and secure the lid.
Make sure the steam release handle is on the ‘’Sealing’’ position and switch to ‘’Manual’ mode.
When finished, depressurize using the quick release method and open the lid. Stir in the fish sauce and serve instantly.
If you want, you can also drizzle with freshly chopped parsley prior to serving.
