5-Minute Shrimp Soup

1 cup broccoli, chop into florets
1 large tomato, roughly chopped
2 lbs shrimps, tail-on
3 tbsp butter
3 tbsp olive oil
4 cups fish stock
4 garlic cloves, minced
½ cup fresh parsley, thinly sliced 


1 tsp dried rosemary
2 tsp sea salt 

How to Cook:

Plug in the instant pot. Heat up the olive oil on the ‘’Sauté’’ mode and put in broccoli. Stir thoroughly and cook until golden brown. Drizzle with garlic and cook for one additional minute.
After that put in tomatoes and pour in some fish stock – approximately three tablespoons will be enough. Cook for 7-8 minutes, or until most of the liquid evaporates.
After that put in shrimps and briefly brown. Stir thoroughly and season with salt and rosemary.
Put in the rest of the ingredients and stir thoroughly. Shut and secure the lid and set the steam release handle and switch to ‘’Manual’ mode.
Turn the timer to 15 minutes.
When finished, depressurize using the quick release method and open the lid. If you want, you can also drizzle with some more herbs or spices and serve instantly.
