Adobo Shrimps - Seafood Recipe

Adobo Shrimps

Yield: 4 Servings 


1 lb shrimps, peeled and deveined
1 red chili pepper, thinly sliced
1 small onion, thinly sliced
2 cups fish stock
2 tbsp fish sauce
2 tbsp green onions, thinly sliced
5 garlic cloves, crushed
¼ cup olive oil
¼ cup rice vinegar
¼ cup soy sauce 


1 tbsp peppercorn
1 tsp stevia powder
2 tsp salt 

How to Cook:

In a large container, whisk together olive oil, rice vinegar, soy sauce, green onions, garlic, fish sauce, chopped onion, chili pepper, salt, peppercorn, and stevia.
Put in shrimps and stir thoroughly ensuring to coat shrimps thoroughly in the marinade. Move to a large Ziploc bag and refrigerate for at least 30 minutes (up to 2 hours).
Turn on your Instant Pot and pour in the stock. Remove the shrimps from the Ziploc and place in the pot along with ¼ cup of the marinade.
Stir thoroughly and shut and secure the lid. Make sure the steam release handle is on the ‘’Sealing’’ position and switch to ‘’Manual’ mode.
Turn the timer to 10 minutes.
When finished, release the pressure using the quick release method and serve instantly.
