Almond Bread in a Mug

Yield: 3 Servings  
Ingredients:
  • ½ cup minced almonds
  • 1 cup almond flour
  • 1 tsp baking powder  
  • 2 large eggs, beaten
  • 3 tbsp coconut oil, melted  
  • Spices:
    • ¼ tsp cinnamon, ground
    • ½ tsp powdered stevia
    • ½ tsp salt  
    How to Cook:
    1. In a large mixing container, mix almond flour, baking powder, minced almonds, salt, cinnamon, and stevia. Stir with a kitchen spatula until thoroughly blended. Put in eggs and coconut oil. With a paddle attachment on, beat until all thoroughly mixed.
    2. Pour the mixture into the oven-safe mugs, approximately 1/3 of a mug. Save for later.
    3. Turn on the Instant Pot and pour 1 cup of water in the stainless steel insert. Place your trivet in the bottom of your instant pot and place the mugs on top. Cover with lid and close the steam release handle. Switch the Instant pot to “Manual” mode and turn the timer to 4 minutes. Cook on “High” pressure.
    4. When finished, depressurize using the natural release method. Open the pot and let it chill for some time.
    5. Using oven mitts cautiously move the mugs to a wire rack. Allow it to cool to room temperature before serving.
