Baby Spinach Chicken Wings

  • 1 celery stalk, thinly sliced
  • 1 lb chicken wings, whole
  • 1 small onion, thinly sliced
  • 3 cups chicken stock
  • 3 tbsp oil
  • 2 cups cottage cheese (or paneer)
  • 2 garlic cloves, crushed
  • 2 tbsp ghee
  • cups spinach, chopped  
  • ½ tsp cinnamon powder
  • 1 tbsp chili powder
  • 1 tsp cumin powder
  • 1 tsp salt
  • 2 tbsp mustard seeds
  • 4 cloves
  • tsp turmeric powder  
How to Cook:
  1. Thoroughly wash the meat under running water using a large colander. Drain and save for later.
  2. Clean and rinse spinach. Drain and chop with a sharp knife. Put in a deep container and save for later.
  3. Turn on your Instant Pot and grease the bottom of the inner pot with oil. Switch your Instant Pot to ‘’Sauté’ mode and put in onions, celery stalks, garlic, and mustard seeds.
  4. Stir thoroughly and cook for 3-4 minutes.
  5. After that put in spinach and stir thoroughly.
  6. Lastly, put in the meat and drizzle with spices. Briefly brown on both sides and pour in the stock. Stir thoroughly and put in ghee.
  7. Shut and secure the lid and set the steam release handle. Push the ‘’Stew’’ button.
  8. When you hear the end signal, depressurize using the natural release method and mix in the cottage cheese.
  9. Stir all thoroughly and serve instantly.
