Chilli, Mango And Black Bean Salad - Keto Vegan Recipe

Ready in just ten minutes, this colourful salad combines veggies and fruit with chilli and lime for a sweet, spicy kick. It keeps well and is a great option if you’re into meal prepping.

INGREDIENTS
100g (3 1/2oz) Red Bell Pepper
(core removed and
roughly chopped)
100g (3 1/2oz) Cucumber (cut in half lengthways, remove the seeds and slice diagonally)
100g (3 1/2oz) Cherry Tomatoes
(cut in half)
2 Spring Onions (Scallion) (remove the ends and thinly slice)
1/2  Avocado
(stoned, peeled and cut in chunks)
1/2 Red Chilli (deseeded and finely chopped)
Handful of Coriander (Cilantro)
(stalks removed and
roughly chopped)
150g (5 1/4oz) Mango (peeled, stone removed and cut into chunks)
1 x 400g (14oz) Tin - Black Beans
(drained and washed)
1 Lime (zest & juice)
HOW TO COOK IT
Before you start chopping up the ingredients, please ensure you wash all the ingredients that don’t need peeling.

Place all the ingredients in a large mixing bowl, finishing with the lime juice.

Mix it all together and serve.
